How to Convert to a Vegan Diet in 6 Easy Steps

Congratulations on considering a switch to a vegan diet. If you have gotten this far in your conversion, you already understand the benefits of the vegan/vegetarian diet, so I will leave that discussion for another article. While many are able to simply flip a switch and assume a new life, following are some simple guidelines to assist the rest of us.1. Write a list of the benefits that you expect to accomplish with your new diet. Many convert to vegan/vegetarian diets for health or weight loss reasons. Others do so to reduce their impact on the environment or to detach themselves from the unethical slaughtering of animals that is implicit in the meat industry. Yet others, like myself, convert due to philosophical reasons or because they simply feel more "right with the world" as a vegan/vegetarian. Whatever your reason, get in touch with the new you.2. Recognize that some compromises will have to be made. The food you eat will likely be different from the food that many of your family, friends and close colleagues will eat. Prepare yourself to explain that your conversion is important to you and that you will not judge them, nor do you expect to be judged by them.3. Many find that getting comfortable on a lacto-ovo (including dairy and egg food items) vegetarian diet for a few months helps before the full conversion to a vegan diet is helpful. Be prepared to lose a few pounds of bodyweight while you experiment with new foods. If you have already gotten used to tofu and other soy products such as temper and textured vegetable protein (TVP), you are ahead of the game. If not, don't fear; you will find that these products (they are readily available in health food and large grocery stores) can be made to closely resemble and taste like their meat counterparts, reducing the change you will have to experience.4. Search the Internet for vegan/vegetarian recipes. Though restaurants are becoming increasingly accommodating of vegan/vegetarian diets, one of the benefits for me in the early years was the necessity of preparing many of my own meals made me a better cook and I saved money compared to eating out. There are also many vegan cookbooks that are readily available.5. If improved health was one of your motivations for your conversion to a vegan/vegetarian diet, recognize that you still must be mindful of the quality of the ingredients in your food. Try to utilize whole grains and pastas; use cooking oils high in omega 3 fatty acids, such as hemp, olive or flax oils; avoid sugars and glucose (yes, including honey) and other simple carbohydrates like processed grains as much as possible; ensure you get enough protein from beans, legumes, nuts and related products (consider a plant-based protein supplement if your diet is calorie-restricted).6. Cast a shining light of health and happiness. You are making the world a better place. Your food choices protect the spirit of life.

Contrary to popular belief being vegan doesn't mean grass-grazing, but on the other hand it doesn't necessarily mean a diet that's free from chemicals, refined sugars, etc. - the onus is on the consumer to be informed (i.e. reading nutritional labels) about his food choices.The delicious alternatives are plentiful and readily available these days whereas twenty years ago becoming vegan was an arduous process. You can easily find soy or tofu burgers and hot dogs, veggie ground beef, and many other meat substitutes at local health food stores and even many mainstream grocery stores, as well as online. Soy, rice, and almond milks are easy to find in a variety of flavours and can take the place of regular milk or cream in any recipe.Some alternatives may seem costly in contrast to the "real thing" but as being vegan has become more mainstream (as people become more conscious of the health benefits, environmental upside, and animal-friendly aspects) this is rapidly changing. As mentioned above, products can be found at your local grocer and competition is driving down costs. Raw Food for Preventing Disease

It is unfortunate what people will resort to in order to recover from pain and suffering. That is, people are programmed to think that there is nothing they themselves can do to heal. The medical system programs us to think that if we are sick, we need to go to the doctor and take a pharmaceutical medication to help the sickness. The problem is that over time, these medications can do a lot of harm, and it is even possible to overdose despite taking the medicine as directed.The worst is when people are forced to take a wide variety of pharmaceuticals, because some people have a multitude of conditions and/or diseases. Often many different pills are needed to treat one thing, and over time people can be led to take dozens of pills a day. The horror is that most or all of this stuff is not needed, and people are doing this because they are not aware there are other options.Of course, one of the reasons people stray from those options is because they require drastic life changes. In order to be perfectly healthy, one needs to avoid most of the mainstream food in society. Don't eat meat, don't have dairy regularly, don't consume partially hydrogenated fats, eat as little refined sugar and processed foods as possible. Eat as many fruits, vegetables, and raw foods as possible. If people simply did that, then heart disease and diabetes simply would not exist. Other diseases would start to decrease rapidly, and I've heard of conditions like multiple sclerosis being fully managed by a raw food diet.The power comes from the nutrition in regular fruits and vegetables, and the enhanced absorption that comes from a raw food diet. The problem is that even when people eat good stuff, the absorption of the nutrients can be inhibited by bad things in other foods. The chemicals in processed foods inhibit the body's absorption of vitamins, minerals, and antioxidants. That's why it is just as important to cut out body-degrading food as it is to add in body-enhancing food.Making such a drastic change may seem difficult at first, but that's what must be done. Doing things slowly is frustrating because you do not see results, and although the initial change is hard, once the benefits are realized you will wonder why you'd never done this before. And you'll definitely never go back!

Raw Food Recipes for a Food Dehydrator

If you are considering or already on a raw food diet, you may find one of your best allies is a dehydrator. With tons of recipes available for your food dehydrator that are excellent for a uncooked food diet, you will not only get delicious, fresh and healthy meals that are part of the diet, you will save money and easily preserve your raw foods for future meals. Even if you are not on a raw diet, these dehydrators are great for vegetarians and vegans as well! One of the best brands on the market is the Nesco food dehydrator.CrackersCrackers are great to make in a Nesco food dehydrator and some of the most delicious and healthy are flax crackers. Tasty flax seed crackers are a perfect snack for those on an unprocessed diet and taste great with salsa or hummus. A perfect recipe for these flax seed crackers is as follows: in a bowl, soak 2 cups of whole flaxseeds in 2 cups of water for about 1 ½ hours. When the time is up, it should look like goo. Stir in ¼ cup of Bragg's Liquid Aminos, a pinch of sea salt and 1 tablespoon of raw fresh herbs. Spread this mixture on the Nesco food dehydrator teflex sheets and dehydrate for 4-6 hours at 110 degrees F. Turn the mixture over and dehydrate for an additional 3-4 hours. Break your crackers into pieces and enjoy with some homemade dip or put into soups.Kale ChipsAn amazing super food, kale is the superstar of the raw fare diet. Making kale chips in your dehydrator is an excellent way to get enough of this amazing green in your diet. To make kale chips: tear small pieces of kale onto your mesh dehydrator tray. You should use approximately a bunch of green, leafy kale. Sprinkle the kale with ¼ tsp of sea salt and place in your Nesco food dehydrator for an hour at 145 degrees F. Turn the trays around after the 1st hour and lower the temperature to 115 degrees F. Check them at this point. If they are at the desired crispiness, remove, cool and eat. If not, put them in for another hour. You can further spice them with salt, pepper, or your own mix of favorite seasonings.Fruit LeatherA great and healthy snack that is not only uncooked but a hit with kids is fruit leather. They are extremely easy to make, taste great and you can customize them to your own tastes. For a mixed fruit leather made in your Nesco food dehydrator: Cut up and puree 4 apples, 2 mangoes and 2 bananas. Make sure it is extremely smooth with no chunks of any kind. Spread the mixture on a teflex sheet and dehydrate for about 8 hours at about 115 degrees F. Both you and your children will love these!Raw Food CookiesOn to raw rations dessert, making cookies in your Nesco food dehydrator that are uncooked is a favorite of many on the raw diet. Here is a recipe for lemon cashew cookies: Process 2 cups of raw cashews in a blender until it is a fine powder. Add the juice of 2 lemons, 1 ½ cups of raw shredded coconut and 2 tbsp of raw honey. Stir and drop onto teflex trays and dehydrate at 115 degrees F for about 6 hours. These cookies will be a hit at any party or just to keep around the house to nibble on.There are many recipes that are fantastic for a diet such as this. A Raw Food Diet Is It Healthier

In today's ever health-conscious world, the Raw Food Movement is on the rise, gaining new devotees as well as critics.The basic premise of the raw food diet is that raw foods in their whole, natural form provide the enzymes necessary for digestion and vibrant health, and that cooking food destroys these natural enzymes along with many of the other critical nutrients in whole, unprocessed food. Certain foods are proven to be healthier when cooked. For example, lycopene is an antioxidant found in tomatoes and watermelon. However, lycopene content is highest and most bioavailable when tomatoes are cooked. Many vegetables, such as kale, spinach, onions and garlic are also more nutritious when cooked because light cooking unlocks many of their compounds, making them more easily absorbed.However, science has also shown that over-cooking many foods -- especially meats -- is unhealthy, as foods that are overcooked can produce chemicals such as acrylamide and others that contribute to inflammation and more serious health problems over time.The best cooking methods are light steaming or sauteing, without over-cooking at high temperatures. These methods can help to make nutrients in the food more available and easier to absorb, without causing the harmful chemical reactions found in foods cooked for long periods at high temperatures.The Enzyme Debate
While raw foodists claim that enzymes from raw foods are critical for proper digestion, the American Dietetic Association asserts that the body naturally produces the enzymes necessary for digestion and does not need to obtain them from food. In addition, because the ph of the stomach is very low, meaning that it is very acidic, the stomach breaks down all proteins including enzymes. This means that the enzymes found in fruits and vegetables are essentially destroyed by our stomach acid, as its job is to break down food and kill any harmful pathogens. The amount of enzymes found in raw food have not been shown to drastically improve digestion or the levels of natural enzymes in the body. One critic of raw food, Dr. Stephen Barrett, states, "Raw food contains no enzymes needed for digestion. All the enzymes needed for human digestion are made in the body."However, it is important to note that with today's fast-paced lifestyles and the Standard American Diet, many people are enzyme deficient and can greatly benefit from including supplemental digestive enzymes in their daily program. Enzyme supplements are typically designed to survive the stomach acid environment and release their digestive health benefits once they reach the small intestines, where most nutrient absorption occurs.Everything in Moderation
For many, the raw food diet may seem like another fad diet. While it may have nutritional drawbacks for some people with weaker digestion, it can also provide benefits from the abundance of fresh produce typically consumed in a raw food diet. Once again, the old adage of "everything in moderation" may be applied in this case. There isn't one type of diet that is the magical formula for vibrant health, nor does one type of diet work for everybody. Meat-Free and Vegan Friendly Kale Salad Recipe - A Tasty and Uncooked Way To Consume Your Greens

Meatless and vegan holiday recipes are probably the most yummiest dishes on the table during the holiday seasons and special events. In fact, consider how some of your favorite holiday dishes. It's not fairly often that I hear people "raving" about how delicious the Turkey, (bless its soul) was. Instead, I usually hear things like, "wow - that mac & cheese was absolutely wonderful," or "I have to get that potato salad recipe." Who would've thought that all of the stars of holiday gatherings are usually side dishes and desserts and are also meat-free?During the holiday's, my mother would always cook Kale with Turkey Necks (I know...). As I become a vegetarian, I would always have to pass on the "greens" until my dad started making this meat-free and tasty vegetarian kale salad. This meatless recipe is also vegan friendly, which is always a plus, and it is really simple to make and absolutely delicious. Since this kale recipe is not cooked, you will be able to consume the many essential vitamins and nutrients that our green and leafy friends provide the body.Kale Salad Recipe & VideoIngredients:·1 Bunch of Clean Fresh KaleDressing Ingredients:·1/4 cup of Tamari (you can use soy sauce or liquid aminos)·1/2 cup of water·3 tablespoons of olive oil·Juice from a 1/2 lemon·1 clove garlic·1/2 cup of sunflower seeds (optional)Directions:1. Chop the kale in to small pieces and place in a large bowl (if you have a bowl with a lid so that you can toss the kale salad later) and set aside.2. In a blender, pour the Tamari, water, olive oil, lemon juice, and clove and blend for about 1 minute. Taste the dressing to make sure it is not too salty. If the dressing is too salty, then add some more water and blend for another 30 seconds.3. Pour the dressing on the kale and sprinkle the sunflower seeds on the kale.4. Toss the salad, cover, and place in the fridge and let it marinade for at least 4 hours.The more time you allow the Kale to soak in the dressing, the better. I would highly recommend making this salad the night before you plan to eat it as this allows plenty of time for all of the flavors of the dressing to mesh together with the Kale (or your green of choice). Also, fellow vegetarians, let me know if you try this recipe with a different type of green (i.e. turnip or collard). I have just prepared this salad recipe with kale and would be interested to find out how the substitute of greens worked out to suit your needs and taste buds. I am sure it will be just as fulfilling...but of course, inquiring vegetarian minds want to know!You can also spruce this salad up by adding some a variety of flavors and textures by simply sprinkling a handful of sunflower seed kernels on top of the salad and even adding some sliced cherry tomatoes. The vegan diet comes to the forefront of society with many vegan celebrities. Several reasons support their diet changes, such as choosing to not support animal cruelty. Another reason is because of their health and looks, a big issue for celebrities who are in television and movies.Ellen DeGeneres - both Ellen DeGeneres and her spouse, Portia de Rossi, are vegans because of their love for animals. Once they saw a documentary on caged animals, Ellen DeGeneres said it was an easy decision for them to quit eating meat and dairy products.
Mike Tyson - Mike Tyson has recently gone to the vegan diet, slimming down in the process, while also spending hours in the gym to build up his strength. His reasoning was to remove "drama" from his life and become a better person through the vegan diet's benefits.
Demi Moore - for anyone who knows Demi Moore it should come as no surprise she is a vegan. What is a surprise is the fact she is one of the celebrities who is now part of the new raw vegan food movement that is entering mainstream America.
Robin Williams - another popular celebrity who is part of the new raw vegan food movement is Robin Williams. Recently having heart surgery, going vegan is part of trying to avoid further heart attacks and staying healthy.

The Best, Easy, Vegetarian Lasagne Main Course Menu

You don't have to be vegetarian to love this lasagne recipe. The noodles don't have to be pre-cooked so you only need two dishes to create it.Here is what you need:1/2 box lasagne noodles
One 24 oz. jar of your favorite pasta sauce
Two cups shredded mozzarella cheese, divided
16 oz. low fat cottage cheese
Two eggs
1/2 parmesan cheese
16 oz. frozen chopped spinach, thawed
Dry parsley flakes
9" X 13" baking pan
Large bowlPreparation:In a large bowl, mix the cottage cheese, one cup shredded mozzarella, parmesan cheese and two eggs. Spread 1/3 of the pasta sauce on the bottom of the 9" x 13" pan. Lay three or four dry noodles on the sauce. Spread 1/2 of the cheese mixture and 1/2 of the thawed spinach over the noodles. Repeat 1/3 sauce, three noodles, 1/2 cheese mixture, remaining spinach. Place three noodles on the top and spread remaining sauce over the noodles. Cover with aluminum foil and bake for one hour.Remove foil, spread remaining one cup shredded mozzarella cheese over the top and sprinkle with dry parsley flakes. Return to oven for five minutes, uncovered. Remove from oven and let cool for 15 minutes.This lasagne is great because you can cut it up and freeze it. It really tastes better if it sits for a day. You can microwave it too, for an easy, frozen, fix ahead meal.It is not necessary to add any salt or oil to this recipe. It tastes great just the way it is.For the salad, this is what you will need:One head Romaine lettuce
One red onion
One large tomato
Japnese rice vinegar in your favorite flavor
Fresh black pepperTear the lettuce into bitesize pieces. Cut the tomato into bitesize chunks. Slice the onion into thin circles. The rice vinegar is almost calorie free but has a lot of flavor, making this a low fat salad. Sprinkle with fresh ground black pepper.For the garlic bread, this is what you will need:Trader Joe's multigrain sourdough bread with sunflower and sesame seeds
Butter or olive oil
Fresh garlic clovesPreheat the broiler for five minutes. Lightly butter or oil the bread slices. Crush and chop one clove of garlic for each slice of bread and sprinkle on top. You can also lightly sprinkle some parmesan cheese on the bread if desired. Place bread in a shallow pan and broil for a few minutes until top starts to turn golden brown. Watch carefully so bread does not burn. You will have a crispy top and soft bottom to your garlic bread.Here you have some great comfort food, but it is still healthy. Enjoy.

Your body's sweet receptors (two protein receptors that are located on your tongue), are not adapted to cope with high-sugar consumption. Therefore, this abnormally high stimulation of these receptors by sugar-rich diets generates extreme reward signals in your brain, which have the possibility to override the normal self-control mechanism, and thus can lead to an insidious addiction.
